For those requesting a copy of the Quickie Quiche served at the Hospice House Brunch, here it is:

Quickie Quiche

Ingredients:

1 tbs butter, 1/2 medium onion-peeled and finely chopped, 5 oz. broccoli florets - cut small, 1 ready made deep dish pie shell, 12 medium-sized mushrooms, wiped clean and sliced, 1/2 cup grated sharp cheddar cheese, 1/2 cup grated Monterey Jack cheese

For egg mixture: 3 eggs, 1/4 cup milk, 1/2 cup whipping cream, 1/2 tsp. ground white pepper, 1/4 tsp. nutmeg, pinch of salt.

Directions:

Preheat oven to 450 degrees.  Melt butter in frying pan on low, Add onion and saute until translucent.  Add broccoli florets and saute 3 minutes more.  Remove pan from heat and set aside.

Into bowl add eggs, milk, cream, white pepper, nutmeg and salt.  Stir with fork til blended.

Into pie crust, add broccoli, onions, mushrooms, cheddar and Monterey Jack cheeses.  Pour egg mixture over the top and lightly arrange with fork. 

Place in center of oven and bake 15 minutes.  Reduce heat to 350 degrees and bake 45 minutes more or til done (see doneness check).  Remove from oven and let cool 10 minutes before serving.  *Quiche is done when knife inserted in center of quiche comes out clean.
